Everything old is new again! What goes around comes around! These statements are what I think of with the Vintage Side Dish theme for this months “Recipe ReDux”, including sharing a story about a favorite family side dish – I had the perfect one in mind. It was something we had a few times a year when I was growing up and now it’s about once or twice a year during the holidays. It’s something that I often forget about making because it seems so easy.
Veggie Medley is a warm side dish featuring vegetables and rice, and of course cheese. I loved it so much I even entered it in the county fair as a child and received a blue ribbon. So you can say it’s been my favorite for more than 25 years.
The recipe comes from my mom. And she passed it on to me at one of my bridal showers in my favorite cookbook that houses all foods good.
It’s bulging now from clippings I’ve tried. But I have even bought one already for my daughter to pass on to her when she gets married someday. A cherished memory.
Every time I open the cookbook I read this message.
Only a couple of changes from the original – I use brown rice and a Healthy Recipe Cream of Chicken Soup which means lower fat and sodium level. Don’t want to mess too much with perfection! It’s great with mashed potatoes and turkey.
- 1/2 cup quick cooking brown rice
- 1 – 16 ounce bag frozen California mix vegetables
- 1 can Healthy Recipe Cream of Chicken Soup
- 1/3 cup cheese whiz
- 1/2 cup water
- 1/2 cup Durkee fried onions
- 1/2 cup cheddar cheese
Mix all ingredients together. Bake at 350 degrees for 45 minutes to one hour. Or until liquid is absorbed and rice is cooked.
